Nhắc đến Khô Châu Đốc thì không thể nào không nói đến khô nhái Châu Đốc còn được mệnh danh là "Khô vũ nữ chân dài".

Hiện nay, khô nhái nổi tiếng nhất nhất ở xã Vĩnh Trung, Tịnh Biên (An Giang). Con Nhái thường chỉ xuất hiện nhiều vào mùa mưa, người dân phải đi soi vào ban đêm và chế biến qua nhiều công đoạn thành khô.

Khô nhái có giá trị dinh dưỡng cao và món khô nhái chỉ có chiên nước mắm hoặc chiên giòn là ngon nhất, bạn có thể làm thêm nước chấm từ sa tế kiểu thái ăn kèm rất ngon.

Ngoài tác dụng làm thức ăn, nhái khô còn giúp thanh nhiệt, giải độc, chống viêm,.. rất tốt cho sức khỏe. Thịt nhái dai và ngon không thua kém bất cứ một loại thịt nào.

Đối với người thưởng thức thì món khô nhái này rất dễ ăn, ngon và giòn, còn có thể ăn kèm với cơm cũng ngon miệng với các món đồ chua như: kiệu, dưa muối...hoặc dùng để đãi khách vào các dịp Lễ, Tết rất thích hợp.
