Vào mùa nước nổi thì vùng Tây Nam Bộ những loài rắn nước sinh sôi rất nhiều. Để cho ra miếng Khô Rắn ngon phải lựa chọn nguyên liệu còn tươi là loại rắn nước, rắn bông súng. Các công đoạn lột da, xẻ thị, ướp nguyên liệu… diễn ra nhanh chóng và liên tục để rút ngắn thời gian chế biến, giữ được chất lượng thịt và màu thịt rắn tươi ngon.

Khô rắn An Phú trở thành một thương hiệu đặc sản An Giang, đây là loại khô rắn được ưa chuộng và phổ biến nhất tại An Giang.

Thường Khô rắn được du khách thưởng thức tại chỗ bằng cách nướng trên lửa than hồng. Khô rắn nướng tuy chế biến không khó nhưng đòi hỏi sự tỉ mỉ, phải nướng kỹ hạn chế lửa lớn. Lửa nướng vừa phải, hơi nóng sẽ làm thịt chín cả trong lẫn ngoài, bay tỏa mùi thơm ngọt tự nhiên. Nếu để lửa quá lớn, thịt sẽ cháy bên ngoài, bên trong vẫn còn sống. Khô rắn nướng vừa chín tới, xé nhỏ chấm với tương ớt hoặc mắm me kèm theo tí rau thơm là đã có được món ăn ngon vừa đơn giản lại dễ chế biến không quá khó.

Là đặc sản An Giang nổi tiếng mà mỗi khi có dịp du lịch An Giang được rất nhiều thực khách lựa chọn mua về sử dụng hoặc làm quà tặng.
