Với điều kiện tự nhiên thuận lơi nguồn lợi thủy sản trên hai con sông Tiền và sông Hậu đa dạng và phong phú nên đặc sản mắm Châu Đốc là đặc sản có quanh năm. Nhưng đặc biệt tươi ngon và dồi dào nhất vẫn phải kể đến từ tháng 7 đến tháng 10 âm lịch "Mùa nước lũ hàng năm".
